Galindo’s Authentic Ecuadorian Cuisine, a new culinary option offering Mainers a taste of Ecuadorian dishes, is set to open in Veazie. The start-up, led by head chef Veronica Greener and her husband Taylor Greener, will serve authentic Ecuadorian dishes like ceviche, empanadas, and fritadas every Saturday at Korean Dad.
Korean Dad, a kitchen incubator that has hosted chefs specializing in food from around the world since 2021, provides a space for culinary entrepreneurs to jump-start their careers. Veronica, who has worked as a sous-chef and nanny, was encouraged by her husband to open Galindo’s and share her cooking with the public.
The couple, originally from New York, chose Maine as their new home six months ago due to Taylor’s family ties and fond memories of visiting the state. Veronica is excited for Mainers to try their ceviche de camaron and other Ecuadorian dishes, emphasizing their hearty and filling nature.
Named after Veronica’s maiden name and her grandfather’s first name, Galindo’s hopes to expand into a food truck or brick-and-mortar restaurant in the future. Veronica envisions continued success and growth for the eatery, driven by the hope that Mainers will appreciate and enjoy the flavors of Ecuadorian cuisine. I
