Bon Appetit recently featured eight anticipated restaurant openings across the country this summer, including Sap Sua, a Vietnamese restaurant in Denver. Sap Sua is also on The Denver Post’s list of most-anticipated restaurants for 2023. Owners Anna and Anthony Nguyen plan to offer traditional Vietnamese dishes with a twist, such as a charred cabbage dish and grilled pork shoulder steak with lemongrass marinade. Anthony, a first-generation Vietnamese American, aims to bring an interpretation of his family recipes to Denver, combining kitchen experience with childhood memories. Sap Sua’s location on East Colfax Avenue is set to open in mid-June, and the restaurant is expected to provide a unique and flavorful dining experience for those familiar with Vietnamese cuisine.
